I will never forget meeting my first Artisan Roaster over 15 years ago. He allowed me to spend over 40 hours on a Probat and I learned I had a knack for it. Roasting is like cooking..pay attention, stay one with your art and machine, take readings, take notes, note time and temps, and most of all, care about what you are doing and nothing can go too bad. Roasting is a lot like flying...hours and hours of boredom punctuated by sheer terror!
That was the case of my first Air Roaster which I bought used and discovered it needed new innards. Several hundreds of dollars later, I discovered that it worked as good as new and I felt closer to roasting coffee for it.
It brought me back to the days when you owned that first old car and you knew it needed work and effort. The effort payed off and you soon had a better vehicle than before. Such was the case with my Sono Fresco roaster. Ole Red is 11 years old and the original Syd and Jerry's control board roasts as well as the day is long. After putting in a new Robert Shaw gas valve, new RTD sensor, new sensor wires and a new LP orifice, it became a new machine. Thanks to Sean at Sono Fresco who was always patient as I went through the pains of restoring a machine that some doubted would never work right. It does and I have a piece of history on my hands as well.
The day is fast approaching where we will add a drum roaster as well. I love roasting and I love the satisfaction of my customers when they receive their coffee's from me and we are able to share and commune about our love of handcrafted artisanal coffee together.
Never underestimate the power of a determined mind! My mind is set on delivering some of the finest handcrafted, artisan roasted coffee's out there. Of course, it starts with a great quality bean that is roasted in a way that treats the bean as a high quality food item. We call this THIRD WAVE COFFEE.
